Shelly Prince

I had the honor of being part of the HNF family for 4 years of undergraduate school and 2 years of graduate school. My time spent as an undergraduate student in dietetics was extremely challenging and fulfilling. The HNF professors and staff were very friendly and helpful, and the personal guidance they provided motivated me to strive for success.


As students, we had the opportunity to volunteer in the community and observe various aspects of the dietetic profession. We volunteered at the East Baton Rouge Food Bank and visited a dialysis center to learn more about the how the equipment is used and the dietitian’s role in this setting. I also worked with the EBR parish Council on Aging and Meals on Wheels. As undergraduates, we completed several case studies, mock counseling sessions, and presentations to prepare for the dietetic internship and the workplace. After completing the coursework and dietetic internship at LSU, I passed the registration examination to become a registered dietitian.


My goal was to work in the field of nutrition research, and when I expressed this desire as an undergraduate, a professor presented me with the opportunity to become involved with undergraduate research and receive hands-on experience in the food and nutrition lab. I also had the experience of presenting research findings at the Institute of Food Technology annual meeting. This prepared me for graduate school, during which time I completed another research project, and published several abstracts of our study. As graduate students, we also traveled to the annual Experimental Biology conference in San Diego to present our research projects and learn about current research in the field.


Having research experience as a student helped me to get a job at the Pennington Biomedical Research Center in Baton Rouge, where I am currently employed in the Health Psychology department and involved in several obesity prevention research projects. It comforts me to know that I can still contact my professors from the HNF department at LSU, and they continue to share their knowledge and advice. I am very satisfied with my experience at LSU and all that the HNF program has to offer.
